The Baldacci wine cave is built into the hillside beneath our Stags Leap District estate. Inside, hundreds of French oak barrels hold Cabernet Sauvignon aging quietly in conditions the Napa Valley sun cannot reach — a constant 58°F, 70% humidity, no light, no vibration.

Why a Wine Cave Matters

Temperature and humidity are the two factors that determine how wine evolves in barrel. Above-ground barrel rooms in Napa Valley can swing 30°F between summer and winter. Those swings accelerate oxidation and push the wine through its development phases faster than the winemaker intends.

A cave eliminates that variable. The earth itself acts as insulation. Our cave stays between 56°F and 60°F year-round, which means the wine ages on the winemaker's schedule — not the weather's. The result is more integrated tannins, deeper complexity, and wines that are built to age in bottle for decades.

What You'll See on a Cave Tour

Every tasting experience at Baldacci includes access to the cave. Our Winemaker's Collection Tasting ($250/guest) features a private cave tour led by Winemaker and Proprietor Michael Baldacci, including a barrel tasting of an upcoming vintage directly from French oak.

The Barrels: French Oak from Managed Forests

The barrels in our cave are exclusively French oak, sourced from forests with 200-year rotation cycles. Michael participates in the Master Cooper program, traveling to France to inspect stave wood, observe the coopering process, and select barrels based on grain density and toast level.

Each barrel costs between $1,000 and $1,200 and is used for two to three vintages before being retired. The first year in new oak imparts the most flavor — vanilla, baking spice, a subtle smokiness. By the second fill, the oak influence softens, letting the vineyard character dominate.

Baldacci Family Vineyards is open daily from 10 AM to 4 PM, by appointment. We are located at 6236 Silverado Trail in the Stags Leap District of Napa Valley.

  • Stags Leap Tasting — $125/guest. Estate wines in our tasting salon with a walk through the cave.
  • Winemaker's Collection Tasting — $250/guest. Private tour and barrel tasting with Michael Baldacci, followed by a 10-year horizontal tasting of three single-vineyard Cabernets.
